Cut chicken into bite-sized pieces and place in a bowl.

In a separate bowl, combine soy sauce, honey, garlic, ginger, rice vinegar, cornstarch, and sesame oil to make the sauce. Mix until well combined.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and almost cooked through, about 5-6 minutes.

Pour the sauce over the chicken and bring to a simmer. Cook for 2-3 minutes until the sauce thickens and chicken is fully cooked.
